Artichokes may be difficult to eat but I find them to have a whole lot of flavour and think the work it takes to eat them is fun! Served with this delicious sauce this meaty vegetable can make a hearty meal.
For the Artichokes:
1 whole lemon cut in quarters
whole peppercorns
chili flakes
dried oregano
dried thyme
bay leafFor the dipping sauce:
3 parts dijon mustard (my favourite is Maille Dijon Originale)
2 parts mayonnaise
ground black pepper
lemon juice
Method:
- slice tips of artichokes flat
- trim and peel artichoke stem of Fibrous material
- Put artichokes, lemon and spices into a pot. Pour enough water into the pot to cover the artichokes
- Bring artichokes to a boil then lower heat to medium and cover; be sure the artichokes are submerged in water
- Cook artichokes til leaves pull away cleanly from the stem, about 45 minutes
- While the artichokes are cooking mix the dijon mustard, mayonnaise, pepper and lemon juice in a bowl to make the sauce
- Remove artichokes from water when tender and drain of liquid
- Serve hot with the delicious sauce!
