Breakfast of champions, these tartlets take some effort to make but they will make for a winning morning meal, they are just perfect for sunday brunching!
Per each tartlet:
1 piece Spelt toast bread
1 slice of bacon
a handful of arugala
1 egg
1 tbsp olive oil
salt & pepper
Method:
- Preheat oven to 375F
- Brush bread with olive oil and place bread in a greased large muffin tray, toasting in the oven for 5-7min
- In the meantime pan fry bacon until crisp, pat grease off then crumble and set aside
- In a different pan sautee some arugala with olive oil for 2 minutes to wilt it
- Arrange the bacon and arugala atop the toast in the muffin tray and crack 1 egg on top, season with salt and pepper
- Bake in the oven for 18min and serve immediately
