Baked Salmon with Garlic and Dijon

If you love dijon mustard as much as I do this is truly the best Salmon you’ll ever try!  Salmon provides important amounts of the antioxidant amino acid taurine and is a source of vitamin B12, vitamin D, selenium, niacin, omega-3 fatty acids, protein, phosphorus, vitamin B6, choline, pantothenic acid, biotin and potassium.  Adapted from a recipe I found on the food blog Natasha’s Kitchen this delicious Salmon recipe is low fat, extremely healthy, and makes for a delicious dinner.

1 1/2 lb salmon fillet
A large handful of fresh parsley, chopped
7 garlic cloves, pressed
2 large Tbsp Dijon mustard (my favourite is Maille Dijon Originale)
Sea salt
Fresh ground black pepper
3 Tbsp of olive oil
Juice of one lemon
2 cups of Basmati Rice
1 Litre of water

Method:

  • Slice salmon into 4 even portions
  • Combine the parsley, garlic, dijon, olive oil and  lemon juice
  • Marinate the salmon in the sauce for 30 minutes in the fridge
  • Preheat oven to 450˚F.
  • Pour the salmon and all the sauce into a foil pocket and bake for 15 min
  • In the meantime bring the water to a boil and then add the rice. Cover and cook for 12 min.  Fluff with a fork and let stand, covered, for 5 min
  • Serve salmon hot on top of rice
