Fennel has a fantastic licorice taste to it and I think it is one of the world’s healthiest foods; it limits cholesterol build-up, absorbs water in the digestive system, and helps eliminate carcinogens from the colon. This is my dad’s favourite salad and his recipe does it for me too. Pumped up with Vitamin C this delicious salad is full of flavour and very refreshing.
1 Fennel Bulb
4 peeled mandarin oranges
Cold Pressed Extra Virgin Olive oil (I like Olivia Classica by GiGi)
White Balsamic Vinegar
Salt & Pepper
Method:
- Slice 1/2 inch off the bottom and 1/2 inch off the long stems of the fennel.
- Cut the fennel into slices and put into a bowl with peeled mandarin oranges
- Drizzle with the olive oil and balsamic to your preferance, adding salt and pepper for taste
