Veggie Frittata

 A Frittata is similar to an omelette or crustless quiche.  The word frittata is Italian and roughly translates to “fried”.    The delicious and nutritious breakfast of champions has a base of eggs and milk and almost anything can be added as a filling – from cheese, meat, and/or veggies – even pasta tastes great in one!  Eggs have 6 grams of high-quality protein and help sustain mental and physical energy throughout the day.  If you have issues with your liver, gallbladder, diabetes, high cholesterol or heart disease however you might want to skip the yolk and substitute extra egg whites only instead and skip the bomba.  This is my favourite way to make a frittata and if you love veggies it’s sure to be delicious and a go-to for you as well!

5 eggs
1 1/4 cup milk
Shredded cheddar or mozzarella cheese (or a combo of both)
2 Green onions, minced
2 tbls Olive oil
1 onion, diced
1 pepper, diced
7 Cremini mushrooms
10 cherry tomatoes, deseeded and juice drained
2 handfuls of spinach
Salt & pepper
Bomba to serve (I like Allessia La Bomba brand)
Method:
  • Pre heat oven to broiler on high (525 f)
  • Whisk eggs, milk, cheese and green onion.  Add salt and pepper
  • In a heavy oven proof pan stir fry onion, pepper, mushrooms, tomatoes and spinach over medium heat on the stove until wilted (about 5 min)
  • Add egg mixture (do not stir!) and grind some more pepper on top.  Cook for 3 minutes
  • Move pan into oven and broil for 6 min in the oven
  • Take pan out of oven and cool to touch.
  • Cut Frittata into slices and serve hot with the bomba!
